The mulled wine
The mulled wine is a hot alcoholic beverage based on red wine heated to 158-176° F with sugar and other spices. Nowadays it is widely known and drunk in Austria, Germany, Switzerland, the Czech Republic and other countries in Europe.

The first recipes of the mulled wine were known in the Ancient Rome, but the real ancestor of this beverage appeared in the Middle Ages in the Central Europe.

Usually, the mulled wine is made of red dry and half-dry wines that contain about 7% of alcohol. There are two main ways to cook this beverage - with or without water, and I’ll describe them both.

How to prepare the mulled wine without water:
1. Heat the wine in the saucepan till 158-170° F and mix it all the time.
2. Cover it and leave for 40-50 minutes to brew. Don’t boil it!
3. After that, add the spices that you like. Usually, people add cinnamon, clove, rind of lemon, honey and ginger. Sometimes, pieces of apple, nuts and cardamom are also among the ingredients.

How to prepare this beverage with water:
1. Use 5-6,7 fl oz of water for each 1,76 of wine.
2. Pour the pan with water and boil it.
3. Add the necessary spices and cook them there until they start smelling.
4. Add sugar and honey and stir the liquid.
5. Add a necessary portion of wine, but do not let it boil, because it will lose its tastiness.
6. As soon as the white foam disappears from the wine surface, pour it in a cup or in glass and serve.
